For the cupcakes:
1 egg
1/2 c. buttermilk
1/2 c. vegetable oil
1 1/2 tsp. vanilla
1 c. flour
1/2 c. granulated sugar
1/2 c. packed brown sugar
1/3 c. cocoa powder
1 tsp. baking soda
1/2 tsp. salt
1/2 c. hot water
Heat oven to 350 degrees and line a cupcake pan with liners. Whisk the egg, buttermilk, oil, and vanilla together. In a separate bowl, combine the flour, both sugars, cocoa powder, baking soda, and salt. Add the flour mixture to the wet mixture in batches. Mix in the hot water and then fill each cupcake liner halfway. Bake 15-20 minutes or until a toothpick comes out mostly clean. Cool to room temperature before frosting.
For the buttercream:
2 sticks unsalted butter, at room temperature
Pinch of salt
3 c. powdered sugar
2 tbsp. heavy cream
1 1/2 tsp. vanilla
Mix the butter and salt at medium-low speed. With speed on low, slowly add in the powdered sugar, then increase the speed to medium-high. Add the cream and vanilla and mix until fluffy.
