OCEAN’S 8 + NUTELLA
Nutella Banana Bread Muffins (recipe from Butter Be Ready: https://www.butterbeready.com/nutella-banana-bread-muffins/)
1 2/3 c. flour
1 tsp. baking soda
1/4 tsp. ground cinnamon
1/2 tsp. kosher salt
1 c. granulated sugar
2 eggs
1/2 c. canola oil
3-4 very ripe bananas, mashed
2 tbsp. sour cream
1 tsp. vanilla
1/2 c. chopped walnuts (*I substituted hazelnuts - feel free to toast them if you like!)
Nutella (1/4 c. total)
Preheat oven to 350 degrees. Line a 12-cup muffin pan with cupcake liners.
Sift together the flour, baking soda, cinnamon, and salt.
In a separate bowl, beat sugar and eggs together until light and fluffy, about 5 minutes. Add in oil, bananas, sour cream, and vanilla. Then, gently fold in the flour mixture and nuts.
Scoop batter into prepared liners. Add 1 tsp. of Nutella directly on top of each muffin and swirl using a toothpick.
Bake until a toothpick comes out clean (a little Nutella is okay), about 30 minutes.
