UNCORKED + AMBROSIA SALAD

Excellent acting and story in this Netflix film. I would expect nothing less given how much I loved other Penny-produced shows (i.e. Insecure and Happy Endings). Brenda: “Nobody’s gonna eat any of my ambrosia salad?

Sylvia: “Huh?”

Newton: “Maybe we just let it cool off.”

Brenda: “It’s Jell-O. It’s already cold.”

Newton: “Yeah. We know.”

Ambrosia Salad (recipe adapted from My Food and Family: https://www.myfoodandfamily.com/recipe/055321/ambrosia-mold)

8 oz. crushed pineapple in juice, undrained

2 c. boiling water

1 pkg. (6 oz) strawberry Jell-O

Cold water

1 1/2 c. thawed Cool Whip (about half of an 8 oz. container)

11 oz. mandarin oranges, drained (save 10 for decoration)

1 1/2 c. mini-marshmallows

1/2 c. sweetened coconut flakes

Drain the pineapple, reserving the juice.

In a large bowl, add the boiling water to the Jell-O mix and stir for 2 minutes until completely dissolved.

In a separate bowl, add enough cold water to the pineapple juice to measure 1 cup. Stir into the Jell-O mixture and refrigerate for 1 hour and 15 minutes.

Add the Cool Whip, whisk until blended, and refrigerate for 10 minutes.

Stir in the oranges (saving 10 for decoration), pineapple, marshmallows, and coconut.

Spray your mold with non-stick spray and then spoon the mixture into the mold.

Refrigerate for 3 hours and then unmold (you may need to dip the bottom of the pan in hot water to loosen it). Decorate with the remaining mandarin oranges.
